I have used iron wok here and it is cooked on medium high to high flame.

Used a broad wok easy stirring and mixing.

Instructions

Heat oil in the pan and add cumin seeds.

Once the cumin seeds turn brown add garlic and ginger which is finely diced.

Add finely diced onions to golden brown garlic and ginger.

Sauté until onions turn light golden brown.

Add tomatoes salt and turmeric powder and stir and smash till the tomatoes become soft.

Add red chilli powder sauté well

Now add the minced chicken and a cup of water. Water will help to break the chicken lumps of minced meat and also will help chicken to absorb the spices.

Add coriander powder and garam masala and sauté.

Add some ghee to give it an extra flavour.

Add yoghurt and cook for 2-3 minutes until the yoghurt has become cream.

Crush dried fenugreek leaves with your palms sprinkle for extra aroma.

Add finely chopped fresh coriander.

Cook until oil separates and the water in the chicken Keema has dried.

Serve while hot with chapati, roti, naan or rice.

*You can add a cup of green peas fresh or frozen. This will make Keema look very attractive will and taste authentic.

*If you prefer the Keema to be with gravy just add a cup of milk along with the yoghurt and Cook till the curry thickens.
