Scrambled Eggs




 Scrambled egg 

1 tbs oil

3 medium sized potatoes cut into wedges 

2 tbs spoon

1 tsp cumin seeds /jeera 

1 tbs garlic finely chopped 

1 tsp ginger finely chopped 

3 big onions diced 

3 red chillies slit 

1 big tomato diced 

1/4 cup milk 

3 eggs

1 tsp turmeric powder 

1 tsp chilli powder

 1/2 tsp salt

1 tsp garam masala 

Pinch of black pepper 

Fresh coriander handful


Pour 1 tbs oil and fry potato wedges till brown. 

Remove and keep aside 

Add two tbs oil and add 1 tsp cumin seeds also add 1 tbs each garlic and ginger and  fry till brown 

Now add onions and sauté add chillies slit into half. This slit will give flavour and spiciness to the onions

As the onions are being fried take 3 eggs in a bowl add quarter cup of milk and beat to mix well. 

Fry onions till brown 

Add tomatoes and sauté until mushy 

Add turmeric, chilli powder and salt and mix well. 

Add the cooked potato wedges and mix well

Once all is mixed well, empty the pan from one side and pour the beaten eggs. Bind the eggs with the onions and potato wedges. 

Garnish with garam masala and fresh coriander

Serve with hot pratha chappati or white rice



Tips cook potatoes till they are soft

Milk in the eggs make eggs soft and fluffy and will give creamy taste.
