Bombay Toast is a popular street food. It is a toasted sandwich that is stuffedwith spiced mashed potato and vegetables. 


There are several variations of the dish, I am sharing one that I have eaten and kids have loved.


Bombay toast is one of the easiest and quick breakfast recipe for toast recipes, especially for vegetarians. the toast has a very similar texture and colour to the traditional bread omelette and even the preparation is very similar. It can be served for morning breakfast or quick evening snack. 


Apart from breakfast and snack, it can also be packed for lunchbox for your children or adults. Usually it is eaten without any side dish like we eat sandwiches but it tastes great with sauce or chutney and a hot cup of masala chai. 


You can increase or decrease the spiciness according to your taste. 


For 6-8 Slices of any bread 


Ingredients for potatoes 

2 large boiled and cooled Potatoes 

1 tsp salt

1 tsp garam masala 

1/2 tsp chilli powder

1/2 garlic & ginger paste 

Pinch of black pepper crushed

1 tbs lime juice

Handful of coriander leave finely chopped 

1/2 tsp cumin seeds 

Mash potatoes and add all the above ingredients and well well.

Ingredients For barter

1 cup besan/chickpeas flour 

1 tsp salt

1 tsp garam masala 

1/2 tsp chilli powder

1/2 garlic & ginger paste

1/2 coriander seeds crushed

Pinch of ajwain/carom seed 

Pinch of dry fenugreek leaves/dry methi crushed

Handful fresh coriander leaves 

1 cup water 


In a bowl pour besan and than add all the above ingredients and mix. 

Add one cup of water and mix well to make barter. 


If you feel the batter is thick you can add little water to give a good consistency to barter. 


Get a thick flowing consistency batter


Spread evenly the mixed potatoes on one slice of bread at a time. 

Cover it with another slice and press it so fat it doesn’t open and seals the potatoes in it. 


Now dip the bread slices in besan batter and let the besan batter cover it from all the sides. 

Repeat the same for more bread. 


Heat the pan with oil and toast on low flame.


Flip over and cook both sides till besan gets cooked completely and bread turns lightly brown


With the help of thongs hold the bread vertically and cook all sides of the bread 


It is ready to serve with any chutney or sauce and not forgetting a hot cup of masala chai. 


Serve these sandwiches while still hot, along with some piping hot adrak wali chai or ginger tea.
