Milk powder barfi

A simple and easy burfi recipe or milk powder fudge recipe prepared with just 4 main ingredients: milk powder, milk, ghee and sugar. An ideal Sweet recipe perfect for any festival and can be prepared within 10-15 minutes.


As I am born in India. And got married in Kuching Sarawak Malaysia  in year 1979. I used to crave for Indian food and sweets. And unfortunately there were no shop selling Indian food or confectioneries. That is the time I started making my own sweets or mithai. 


We also had no YouTube or other social media to refer to. To call some one in India and get recipes was like impossible as the phone will cost me a bomb. 


Every time I wanted to eat anything it was like have to try to cook it by my own self. No body to refer to or ask. 


After so many pots and pans scratchings I got this successful recipe. I used to make for family relatives and friends. 

My children loved this homemade powder milk barfi and now my grandchildren love it too. 

You all are so lucky that to have YouTube watching and Google reference any time to you want. 


Commonly the milk based barfi is prepared with milk solids like khoya or mawa and this is a very long process of hours. However this a cheat version prepared with a combination of milk and a little bit of Ghee sugar and milk powder.


This is one of the simplest barfi recipes compared to those which are based on sugar syrups. Here you don’t have to struggle with getting the right sugar syrup and its string consistency.

Milk powder barfi

INGREDIENTS


¼ cup ghee/clarified butter

1 cup fresh milk
2½ cup milk powder
1 cup sugar

¼ tsp cardamom powder 
2 tbs almonds thinly sliced length wise


INSTRUCTIONS

Keep the flame low 🔥 

In a large pan with thick bottom pour ¼ cup ghee and 1 cup milk.


Add in 2½ cup milk powder. Mix well. 


Add ½ cup sugar first mix well add than another  ½ cup sugar if required( that is if the milk powder and sugar are not binding together) it will be required


Mix well making sure everything is combined well.


Continuous stirring is important here to avoid forming lumps and not sticking to the bottom. 


Stir till the sugar dissolves.

Now keep stirring keeping the flame on low till milk and sugar thickens.


The milk is ill slowly turn into a form of dough after stirring for nearly 10-12 minutes. (Arm strength is really need here as the thickens and it becomes hard to stir).


Stir till the dough separates from the pan.


Do not over cook, as the burfi will turn hard and chewy.


Add in ¼ tsp cardamom powder and combine well.


Pre prepare a greased plate or cake pan lined with baking paper. And now transfer the barfi dough into this pan. 


Press the dough to set well forming a flat slab. 


Sprinkle and spread with chopped almonds and press slightly. 

Let it rest for 2 hours to set or until it is completely set. 


Remove it carefully from the pan and cut into pieces.


Serve it with a hot masala tea or as a dessert. 


Store it in a airtight container.
